- 2 package (8 ounce ea.) cream cheese
- 4 ounce goat cheese
- Salt, pepper and cayenne taste
- 1/2 to 2 cloves minced garlic, depending on how strong you want it, or roasted garlic cloves to taste
- 3 tablespoons chopped Italian parsley
- 2 tablespoons chopped fresh tarragon
- 1 tablespoon picked fresh thyme leaves

Ingredients (for one 7-inch Panettone):
The night before…
For the panettone starter:
- 1/4 cup sourdough starter (click here for recipe)
- 1/2 cup all-purpose flour
- 1/4 cup cold water
- NOTE: If you don’t have sourdough starter, mix 3/4 cup flour with about 1/3 cup cold water, or enough to simulate the thickness of the one seen in the video, and add a pinch (1/16 teaspoon) of yeast. Mix, cover and leave overnight, just like the one in the video.
For the dried fruit:
- 1/2 cup golden raisins
- 1/2 cup dried cherries, quartered
- 1/2 cup diced dried pineapple
- 1/4 cup rum for soaking fruit
For the dough:
- 1/4 cup warm water
- 1 package (2 1/4 teaspoons) dry active yeast
- 2 large eggs
- 1/3 cup plus 2 tablespoon sugar
- 1 1/2 teaspoon vanilla
- 1 tablespoon freshly grated orange zest
- 1 tablespoon freshly grated lemon zest

- 2 1/2 cups all-purpose flour
- 1 1/4 teaspoon fine salt
- 6 tablespoons softened butter

- 1 packet (2 1/4 teaspoon) dry active yeast
- 1/4 cup warm water (100-110 degrees F.)
- 1 cup milk
- 4 tablespoon unsalted butter
- 1 or 2 tablespoon honey
- 1 teaspoon salt
- 2 tsp minced fresh rosemary leaves
- about 3 cups unbleached all-purpose white flour, plus more if needed (NOTE: add about 2 1/2 cups of flour at the beginning of the mixing, and then add more in smaller increments until the dough just starts to pull away from the bowl. Remember, you can always add more, but can’t remove too much! Better a little too sticky than too stiff and dry.)

For the custard base:
- 4 egg yolks
- 1/3 cup white sugar
- 2 cups whole milk
- 1 cup heavy cream
- cook to 170-180 F. , then add;
- 2 to 3 ounces bourbon whiskey
- 3/4 teaspoon freshly and very finely grated nutmeg
For the meringue:
- 4 egg whites
- 1 tablespoon white sugar
– Add meringue to cold custard base, mix, and chill until very cold. Whisk thoroughly before pouring.
