Ingredients
For the Marinade:
- 1 1/2 pounds flank steak
- 2 tablespoons ground cumin
- 1 tablespoon dried oregano
- 1 tablespoon ground coriander
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 1/4 cup lime juice
- Salt and pepper to taste
For Serving:
- Fresh tortillas
- Salsa
- Sliced red onions
- Sliced jalapeños
- Sour cream or Greek yogurt (optional)
- Fresh cilantro leaves
- Lime wedges
Instructions
Prepare the Marinade: In a bowl, combine the cumin, oregano, coriander, minced garlic, olive oil, and lime juice. Season with salt and pepper. Mix well to form a thick paste.
Marinate the Flank Steak: Place the flank steak in a resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it’s evenly coated. Seal the bag or cover the dish with plastic wrap and refrigerate for at least 30 minutes. For the best results, marinate the steak for 2-4 hours or even overnight to allow the flavors to penetrate the meat.
Preheat the Grill: Preheat your grill to medium-high heat. Brush the grates with oil to prevent sticking.
Grill the Flank Steak: Remove the marinated steak from the fridge and let it come to room temperature for about 15-20 minutes. This helps the steak cook evenly. Place the steak on the grill and cook for about 4-5 minutes per side for medium-rare, or adjust the time according to your desired level of doneness. Flank steak is best when it’s cooked to medium-rare or medium to maintain its tenderness.
Rest the Steak: Once the steak reaches your preferred level of doneness, transfer it to a cutting board. Allow it to rest for 5-10 minutes. This resting period allows the juices to redistribute, resulting in a juicier steak.
Slice the Steak: After resting, slice the flank steak against the grain into thin strips. This is essential for ensuring a tender and easy-to-chew texture.
Assemble the Tacos: Warm the tortillas on the grill or in a pan for a few seconds on each side. Then, spoon the sliced flank steak onto the tortillas. Top the steak with salsa, sliced red onions, and jalapeños. Add a dollop of sour cream or Greek yogurt if desired.
Finish with Cilantro and Lime: Sprinkle fresh cilantro leaves over the assembled tacos for a burst of freshness and color. Serve the tacos with lime wedges on the side, allowing your guests to squeeze a bit of zesty lime juice over their tacos before digging in.
